  • Perform regular audits of the plant’s food safety program to identify any weaknesses or compliance issues.
  • Review and validate corrective actions when deviations from the HACCP plan occur.
  Training and Staff Oversight:
  • Train employees at all levels on food safety, quality control measures, and proper implementation of the HACCP plan.
  • Conduct refresher training and educate employees on any changes in regulations or internal procedures.
  • Supervise the daily activities of the plant's food safety team, ensuring that all employees adhere to HACCP principles.
  Documentation and Reporting:
  • Maintain accurate records of HACCP-related documentation, including CCP monitoring logs, corrective actions, and verification activities.
  • Prepare reports for management, USDA inspectors, and other regulatory agencies, summarizing food safety findings and improvements.
  • Prepare for and support USDA inspections and audits, ensuring compliance at all times.
  Continuous Improvement:
  • Lead or participate in plant-wide food safety meetings to discuss issues, improvements, and best practices.
  • Recommend changes to processes, equipment, or procedures to enhance food safety and overall plant performance.
  • Investigate any food safety incidents, complaints, or non-compliance issues and take corrective actions as needed.
  Collaboration with Other Departments:
  • Work closely with production, maintenance, and sanitation teams to ensure food safety is integrated into all aspects of the plant operations.
  • Collaborate with quality control teams to ensure that product specifications and quality standards are met.
  Qualifications: Education:
  • Bachelor’s degree in Food Science, Biology, Microbiology, or a related field, or equivalent work experience in food safety and HACCP management.
Experience:
  • At least 3 years of experience in food safety, quality assurance, or HACCP program management in a meat processing or USDA-regulated environment.
